Does anyone have the recipe for San Antonio raw cucumbers in brine?

I’ve tasted these really great peeled whole cucumbers that are sold by mexican street vendors in San Antonio, Tx. There in large 5 gallon jars and the brine is a very light shade of green. Does anyone have the recipe?

The green is from the chlorophyll extracted by the acid in the vinegar.
